As you likely know, the Stripe action has a Test Mode. To test a form without disabling the live form, you would duplicate the form, enable Test Mode on the duplicated form, and then test using that form. In that environment the 4242... type test numbers will report successful transactions.Logging
You can use a plugin such as WP Mail Logging ( https://wordpress.org/plugins/wp-mail-logging ) to see what data is being sent out through wp_mail. Emails to users would appear in the log, but if this issue is what I suspect it may be a moot point.
Adding new records directly into the DB
Finally, it is possible to insert entries directly into the submission database; however, this requires custom code, which is outside our Scope of Support, and is therefore not something we can provide assistance with.
Errors explained
With respect to the core issue, we have received reports this week that when using older versions of the Stripe API, the presence of a Product Description can sometimes cause a fatal error. I suspect it's possible that this might be what's happening here. Can you let us know which version of the Stripe API is present in your Stripe Dashboard?
Also, if possible, can you remove the Product Description from the Stripe action and process a test transaction, and let us know if the issue is still present?

Stripe seems to have been updated
The STRIPE addon for NF is saying an upgrade has happened: WP dashboard says: "There is a new version of Ninja Forms - Stripe available. View version 3.2.2 details or update now."

Humm.
With the update, is it possible to use - Field Product Description & - Field Product Image again. They have been left blank to get STRIPE sales to work.
backstory +
Last week or so I got great support from NF help desk as our STRIPE was not always working. They suggested that I empty two fields in the advanced tab that shows to the customer at checkout. These can be left blank and then the sales go through.

- Field Product Image have been left blank and it works.
So, I'm wondering, has that issue been addressed with the new update?
I guess I could fuss around and test, but better to just ask.
